Who says Pumpkin Pie can’t be healthy for you? With this amazing alternative you will never crave a slice of pumpkin pie or cake anymore! I love eating pancakes in the morning, noon and night! I am a breakfast kind of girl. These are a perfect mid day snack as well. Enjoy my recipe and post pictures when you make them yourself.

Pumpkin Protein Pancake Recipe:

Combine all the wet ingredients together in a bowl.

  • 1/2 Cup Pure Pumpkin (from a can)
  • 1 Egg
  • 1 Tablespoon of Vanilla
  • 1/2 Cup Water
  • 1 Tablespoon of Coconut Oil Melted

Add in the dry ingredients below to the mixture.

  • 1 Teaspoon of Cinnamon
  • 1/2 Scoop of Protein Powder
  • 1 Cup of Pamela’s Baking Mix

Take a spatula and mix together until the liquid is mixed well with the dry ingredients.

I spray my griddle with Pam spray and put a heaping spoonful of mixture on the griddle.

Once the one side is cooked a little I add a few walnuts to the top and sprinkle a little bit of whole flax seeds to the top as well! Flip them over and cook the other side!

After they are cooked, I take two pancakes and put of course Noosa’s Salted Caramel Yogurt on top with another Walnut to make it pretty. Presentation is fun and so important even at home. I take the other 4 and refrigerate them for a snack or breakfast the next day!

    I love pumpkin pancakes! I like the thought of adding nutrition to them too, since they are very full of carbs. My fav topping for pumpkin pancakes is homemade cinnamon whipped cream 🙂
